My digital pressure cooker is one of my most used kitchen tools. I’m a busy mom and the ability to make a one-pot meal in half the time is something I can’t pass up. So much so that I wrote a cookbook of my favorite Caribbean recipes made easy with Quick Pot, one of my favorite brands of digital pressure cookers.
I get asked for copies all of the time, but the book came with the Quick Pot purchase, and it has sold out. So I’ve decided to share some of the recipes from Everyday Caribbean in the coming months.
This one for Puerto Rican-style rice pudding is undoubtedly one of my go-to’s. If you’ve never had rice pudding made with coconut milk, I can’t wait for you to taste it! It is such a delight. It’s also a budget-friendly healthy-ish dessert that I can get on the table in about a half-hour with the help of my trusty digital pressure cooker! What’s not to love?
When making Arroz Con Leche, it’s essential to use short-grain rice; otherwise, all of your liquid ratios get thrown off. This recipe is for a 6 quart and serves 4. Buen Provecho!

6 Quart Digital Pressure Cooker

INGREDIENTS
1 1/2 cups rice, rinsed well
6 cups boiling water, divided
1/2 teaspoon salt
2 12-ounce cans evaporated milk
2 cups whole milk
2 cinnamon sticks
1 vanilla bean
1 15-ounce can sweetened coconut cream
1 cup raisins
DIRECTIONS
STEP 1
Combine the rice and 3 cups of boiling water in a large bowl and let sit for 15 minutes.
STEP 2
Drain the rice using a fine-mesh sieve and rinse well. Return the rice to the bowl, add the remaining boiling water and let it sit for 15 minutes. Drain and rinse again.
STEP 3
Use the saute setting on your pressure cooker to heat the inner pot. Add the salt, evaporated milk, whole milk, cinnamon sticks, and vanilla bean to the inner pot. Mix and bring to a boil. Once the mixture is boiling, add the drained and rinsed rice.
STEP 4
Cancel the saute function. Place the lid on your digital pressure cooker, making sure the pressure release valve is closed. Use the white rice setting and cook for 15 minutes. When the timer reaches zero, press the cancel button and allow for a natural release.
STEP 5
Once all of the steam has been released, remove the lid. Remove the cinnamon sticks and the vanilla bean. Split the vanilla bean using a paring knife. Scrape the inside of the bean and add the seeds to the rice. Stir the rice and add the coconut cream and the raisins.
STEP 6
Use the saute function to bring the rice pudding to a boil. When the mixture is bubbling, press the cancel button. You can serve the rice right away or chill it. It will thicken as it cools, so add a little cream to loosen it before serving.

I followed your recipe in my instant pot and the milk burned the bottom of the pot. I also had to add extra water as the consistency was too thick. I think next time I’ll use the rice function on the instant pot. Otherwise very delicious.
Hi Sarah! Thanks so much for making my recipe. Definitely use the white rice setting. Only saute in the beginning when you are bringing things to a boil. Extra water or coconut milk is awesome to make it exactly how you like it. XOXO
